KANAZAWA — People who owned stores in the Wajima Morning Market in Wajima, Ishikawa Prefecture, have decided to hold a one-day market in Kanazawa on March 23 with temporary stalls. The Wajima Morning Market area was severely damaged by a large fire caused by the Noto Peninsula Earthquake.
On Wednesday, several members of the morning market cooperative started making “overnight dried fish” products by butterflying red fish and marinating them in soy sauce at a processing facility in Kanazawa.
The two-story prefabricated processing facility, prepared for this occasion, is equipped with four large refrigerators and working tables for processing large quantities of fish.
Eight members of the cooperative, who have been evacuating in Wajima and Kanazawa, will prepare dried fish products and get fresh seafood for the event.
“I haven’t touched fish since New Year’s Eve,” said a 71-year-old member who will be selling fresh seafood on the day. “I’ll do my best, also for those who can’t open their stalls this time.”
